After closing earlier this fall after more than 65 years in business, The Pancake Chef in SeaTac has reopened under new ownership.
The diner, a longtime breakfast spot near the SeaTac area, is now owned by Sarbjit Singh, who also co-owns the Great American Diner in Issaquah and West Seattle.
This will be Singh’s third venture in restaurants.
The original Pancake Chef was a beloved local institution that served generations of diners with comfort food in SeaTac before closing in late September when longtime owner Loren Sisley retired, closing the restaurant after more than six decades of operation.
In announcing the reopening, a cook shared a message of thanks from The Pancake Chef family, acknowledging decades of support from loyal customers.
“Our customers have truly become like family to us, and we cannot thank you enough for the outpouring of love support and memories you have given us,” the message reads.
The message also highlighted the diner’s core values, noting The Pancake Chef’s “love of good food, tastefully prepared,” “love of people and the wish to please,” and “love of high quality cleanliness, and service,” the cook said.
The reopening is expected to bring back a familiar breakfast option for residents of SeaTac and neighboring communities.
